Grease and flour a round mold (ø 20 cm), pour in the mixture and bake at 170 ° C for 40 ‘. - 300 g Mixed fruit to taste (strawberries, kiwi, apricots, peaches, medlars)
- 170 g Sugar
- 140 g Rice flour
- 40 g flour 00
- 30 g Butter
- 6 pcs Yolks
- 2 pcs Eggs
- Lemon peel
- Acacia’s honey
Duration: 1 h 30 min Level: Easy Dose: 6 people
Mix 4 egg yolks with 100 g of sugar, then add 80 g of rice flour. Bring the rice milk to a boil with a lemon zest, strain it over the yolks, return to the heat and cook until it begins to thicken. Pour the rice cream into a bowl, sprinkle it with sugar, cover with a plate and let it cool.
Whip 2 egg yolks and eggs with 70 g of sugar and a tablespoon of honey, add 00 flour and 60 g of sifted rice flour; mix and finally add the melted butter; pour the mixture into a 20 cm donut mold, greased and floured with rice flour
Bake at 180 ° C for 25 ‘. Remove from the oven, let cool, then cut in half and stuff with the cream. Complete with fruit.
